Cabana Taco was born from a simple but bold idea: bring the authentic taco cabana experience — vibrant, fresh, and deeply rooted in Mexican culinary tradition — to the heart of Fort Wayne, Indiana. What started as a small family kitchen in 2009 has grown into one of the most beloved taco destinations in the Midwest.

Our founders, Maria and Carlos Reyes, immigrated from Monterrey, Mexico, carrying with them generations of family recipes, hand-ground spice blends, and an unwavering belief that food should bring people together. Every taco, burrito, and bowl we serve is a tribute to that heritage — crafted with love, served with pride.

2009

The First Taco Sold

Maria and Carlos Reyes open a small food stall at the Fort Wayne Farmers Market, serving traditional Monterrey-style tacos from family recipes. The line stretches around the block from day one.

2012

Opening the Doors

Cabana Taco opens its first brick-and-mortar location on New Haven Ave. The authentic taco cabana atmosphere — warm, vibrant, and welcoming — quickly makes it a neighborhood staple.

2015

Award-Winning Salsa

Our house-made roasted habanero salsa wins the Indiana State Food Festival award for Best Original Sauce. This cements our reputation as a culinary force in the region.

2018

Catering Goes City-Wide

We launch our full catering service, bringing the Cabana Taco experience to corporate events, weddings, and festivals across Indiana. Over 200 events catered in the first year alone.

2021

Online Ordering Launched

We go digital, launching our online ordering platform so guests can enjoy fresh Cabana Taco flavors from the comfort of their homes. Over 10,000 orders placed in the first month.

2024

Next Chapter Begins
